Cabbage, Apple, & Feta Salad with Maple Cider Vinaigrette

I just finished making and eating this salad and I had to come and write about it immediately.  This sald is epic.  I was inspired to mix cabbage and apples together raw in a salad because I slow cooked them together a few weeks ago.  The sweetness in this salad from the apples, raisins, and maple syrup against the tanginess from the apple cider vinegar, dijon mustard, feta, and green onions goes so nicely together.  It felt really hearty to eat too.  mmmmmmmmmm

Let’s get right to it shall we! 😉

Ingredients:

For the salad:
1 small head of cabbage, cored and chopped
2 small apples, thinly cut (I used ambrosia apples)
3/4 of a cup of raisins
3/4 of a cup of slivered almonds
About 150 grams of feta crumbled up (around 2/3 of a cup)
About 2 stalks of green onion, finely chopped

For the vinaigrette:
1/3 of a cup of apple cider vinegar
2 Tablespoons of maple syrup
1 Tablespoon of dijon mustard
1/4 teaspoon sea salt
1/4 teaspoon of pepper
2/3 cup extra virgin olive oil

Directions:

For the salad:
Prep all your vegetables and throw everything in a bowl, then toss it all together.

For the vinaigrette:
Put all the ingredients except the oil in some kind of bottle you can shake, then shake everything together. 
Add the oil, then shake some more. 
(Of course you can always whisk it all together in a bowl, or throw it in a blender and blend too.) 

Maple Cider Vinaigrette

Take time to serve yourself a bowl of this beautiful thing you just created with love, then add your dressing and SAVOUR it!  🙂
